Ingredients:


  • For the Halloumi:

  • 1 block (8 oz) halloumi cheese, sliced into 1/2-inch thick pieces

  • 1 tbsp olive oil

  • Freshly ground black pepper

  • For the Grapefruit & Avocado Salsa:

  • 1 pink grapefruit, peeled, sectioned, and membranes removed

  • 1 avocado, pitted and diced

  • 1/2 red onion, finely chopped

  • 1/4 cup chopped fresh cilantro

  • 2 tbsp lime juice

  • 1 tsp honey

  • 1/2 tsp Grapefruit Salt

  • For the Salad:

  • Mixed baby greens (your choice)

  • Cherry tomatoes, halved

  • Cucumber, thinly sliced

  • Red bell pepper, thinly sliced

Instructions:


  1. Prepare the Halloumi: Heat olive oil in a large skillet over medium heat. Season halloumi slices with pepper and cook for 2-3 minutes per side, until golden brown and crispy.

  2. Make the Grapefruit & Avocado Salsa: In a bowl, combine grapefruit, avocado, red onion, cilantro, lime juice, honey, and Grapefruit Salt. Toss gently to combine and set aside.
