This Coconut Curry Lentil Soup Mix will make a convert out of even the lentil-averse in your life. It's rich and creamy with double the coconut flavor from both coconut milk and the toasted coconut found in A Bite of Good Spicy Coconut Curry Blend.

Ingredients: Red Lentils, Green Lentils, Dried Minced Onion, Spicy Coconut Curry Blend (Coconut Flour, Coriander, Cumin, Fennel, New Mexico Chile, Turmeric, Kosher Salt)


What You'll Need: 4 cups low sodium vegetable or chicken broth, 1 (14.5-ounce) can coconut milk, 1 bunch hearty greens (kale/collards/chard/mustards), stemmed and sliced thin


Cooking Instructions: Add contents of jar plus broth and coconut milk and stir to combine. Bring to a boil. Add greens then simmer, covered, 15 minutes. Uncover and simmer an additional 10-15 minutes, stirring occasionally, until lentils are tender. Season to taste with salt.
