Like Tex Mex cuisine itself, this soup mix is an absolutely delicious mashup of all kinds of delicious things. Part chili, part soup with a wild rice blend mixed in for funsies, this soup is a spicy party in a jar. Indeed, the not-so-secret ingredient is A Bite of Good Baja Fiesta spice blend! And whether you keep it simple or serve it with all your favorite chili toppings, you really just can't go wrong.

Ingredients: Black Beans, Wild Rice Blend, Freeze-Dried Corn, Freeze-Dried Bell Peppers, Minced Onion, Guajillo Chiles, Baja Fiesta (Cumin, Kosher Salt, Coriander, Sweet Paprika, Granulated Garlic, Cayenne, Oregano)

 

What You'll Need: 1 (28-ounce) can diced tomatoes, 6 cups vegetable/chicken broth, 1-2 cups shredded cooked chicken (optional)

 

Stovetop Cooking Instructions: Remove bag of rice from jar and set aside. Add remaining contents of jar plus diced tomatoes and broth to a large pot. Bring to a boil then simmer, covered, 2-3 hours, stirring occasionally, until beans are tender. Rinse rice thoroughly and add to the pot. Simmer an additional 30-35 minutes, until rice is cooked. Stir in shredded chicken, if using, and simmer a few more minutes to warm through. 

 

Pressure Cooker (Instant Pot) Cooking Instructions: Remove bag of rice from jar and set aside. Add remaining contents of jar plus diced tomatoes and broth to Instant Pot. Close lid and set to Pressure Cook on High for 45 minutes. Allow pressure to release naturally for 10 minutes then manually release remaining pressure. Remove lid and set Instant Pot to Saute mode. Rinse rice thoroughly and add to the pot. Simmer an additional 30-35 minutes, until rice is cooked. Stir in shredded chicken, if using, and simmer a few more minutes to warm through.
