Easy Baked Salmon and Asparagus
Makes 4 servings
Ingredients:
4 (6-ounce) salmon fillets
2 tablespoons extra virgin olive oil
2 tablespoons Dijon-Vu All Over Again
1 bunch asparagrus, trimmed (broccoli or Brussels sprouts work well here too)
1/4 cup panko breadcrumbs
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
1/2 lemon, for serving
Directions:
Preheat oven to 400F. Line a baking sheet with parchment.
Pat the salmon fillets dry with paper towels and arrange on the baking sheet.
In a small bowl, mix together the olive oil and Dijon-Vu All Over Again to form a paste. Rub half of the mixture all over the salmon fillets and the other half all over the asparagus. Arrange the asparagus around the salmon fillets in a single layer.
In the now-empty small bowl (don't worry about wiping it out), mix together the panko, salt, and pepper. Top the salmon fillets with the breadcrumb mixture and press gently to adhere.
Bake until the salmon flakes easily and is just cooked in the center, about 12 to 15 minutes. Squeeze the lemon over everything and serve.
