Grilled Chicken Skewers with Grapefruit Salsa

Ingredients for the Marinade:

  • 1 cup plain Greek yogurt

  • 2 tablespoons olive oil

  • 1 tablespoon lime juice

  • 1 tablespoon honey

  • 2 teaspoons Grapefruit Salt

  • 3 cloves garlic, minced

  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch cubes


Ingredients for the Grapefruit Salsa:

  • 2 pink grapefruits, segmented and roughly chopped

  • 1/2 red onion, finely diced

  • 1 serrano chile, seeded and finely diced (optional)

  • 1/4 cup chopped fresh cilantro

  • 2 tablespoons olive oil

  • 1 tablespoon lime juice

  • 1/2 teaspoon Grapefruit Salt

  • 1/4 teaspoon black pepper


Instructions:

  1. Prepare the marinade: In a large bowl, whisk together Greek yogurt, olive oil, lime juice, honey, Grapefruit Salt, and garlic. Add the chicken cubes and toss to coat evenly. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.

  2. Prepare the grapefruit salsa: In a medium bowl, combine grapefruit segments, red onion, serrano (if using), cilantro, olive oil, lime juice, Grapefruit Salt, and black pepper. Stir gently to combine and cover. Set aside until ready to serve.

  3. Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken cubes onto skewers (soaked, if using wooden skewers).

  4. Grill the chicken skewers: Grill for 8-10 minutes per side, or until cooked through and juices run clear.
