Marinated Feta


Marinated Feta & Olives with Grilled Flatbread

Ingredients:

  • 1 block (8 oz) feta cheese, cut into 1/2-inch cubes

  • 1/2 cup extra virgin olive oil

  • 1/4 cup fresh lemon juice

  • 2 tablespoons Lemon-Herb Salt

  • 1 cup mixed olives (Kalamata, Castelvetrano, Manzanilla)

  • 1 clove garlic, thinly sliced

  • 1/2 red onion, thinly sliced

  • 1/4 cup fresh parsley, chopped

  • 2 tablespoons fresh herbs, chopped

  • 4 flatbreads


Instructions:

  1. Marinate the feta: In a large bowl, combine olive oil, lemon juice, and Lemon-Herb Salt. Add the feta cheese cubes and toss well to coat. Cover and refrigerate for at least 4 hours, or overnight for deeper flavor.

  2. Marinate the olives: Add the olives to the feta marinade and toss to coat. Let them marinate alongside the feta for at least 4 hours.

  3. Assemble: When ready to serve, preheat your grill or grill pan to medium heat. Grill the flatbreads for 1-2 minutes per side, until lightly toasted and warmed through.

  4. Arrange the appetizer: Spoon some marinated feta, olives, and a drizzle of marinade onto each flatbread. Scatter with sliced garlic, red onion, and fresh herbs. Serve immediately.
